Brisket

 Ok so I have to admit, while it looks really good, this was not one of my best smokes.  I think I had the fire too high as there was a nice burnt crust on the bottom, and the meat was very dried out.  We pulled off the good meat and tossed it with BBQ sauce and it was ok on a bun, but not a whole lot of flavor to this one… Better luck next time I guess.
